New Sparkling Collection of Quality Wines 2023

In December of last year, we brought home our quality sparkling wines for the third time, which, after nine months of bottle aging, developed their unique character. They were produced by the renowned company Proqin from Velké Němčice, which specializes in the classic method of bottle fermentation. The process of making sparkling wine is very time-consuming and requires patience – the wine needs its time. After the initial fermentation in Moravia, its story begins... Our wines are made using the traditional method known as Méthode Champenoise, which is characterized by secondary fermentation directly in the bottle. After adding the liqueur de tirage, the bottles are sealed with a crown cap, and the process begins, during which fine bubbles form – carbon dioxide, which has nowhere to escape, remains in the wine as bubbles.

The wines of the 2023 vintage matured for nine months on the lees, which adds to their complexity and elegance. Then comes the process called disgorging – a key step in which the sediment formed during aging is removed. The bottles are manually rotated and tilted to move the lees into the neck. After freezing the neck, an ice plug forms, which is expelled when the bottle is opened due to the pressure of the wine. This precise process leaves the sparkling wine perfectly clean.

To soften the taste, an expedition liqueur – a mixture of wine and possibly grape sugar – is added. However, we left our sparkling wines in the Brut Nature category, meaning they contain only minimal residual sugar. This allows them to retain their natural freshness, purity, and fruity character.

The finished wine is sealed with a cork, fitted with a wire cage, and sent to us. Here, the labels are manually applied, and the sparkling wines are placed in the wine cellar and then sent to your home.

Our carefully crafted 2023 vintage sparkling wines combine fine bubbles, a harmony of flavors, and a unique character that will appeal to every lover of quality wines. We look forward to you enjoying their freshness and elegance, not only on special occasions.

We had two types of quality sparkling wines produced using the traditional bottle fermentation method:

Pinot Noir – Blanc de Noir, Brut Nature

A quality sparkling wine made using the classic bottle fermentation method from our vineyards at St. Klara. This vintage offers a harmonious combination of elegance and fine bubbles, created with care and patience.

- Residual sugar: 1.3 g/l
- Total acidity: 6.3 g/l
- Alcohol: 12.5 % vol

In the aroma of the Pinot Noir, you’ll find delicate mineral notes and fruity nuances reminiscent of ripe cherries and apricots. The finish reveals subtle hints of grapefruit peel, giving the wine its unmistakable character.

Riesling – Blanc de Blanc, Brut Nature

Another treasure from our St. Claire`s Vineyard is made using the classic bottle fermentation method. This wine captivates with its freshness and complexity, developed through careful aging.

- Residual sugar: 2.7 g/l
- Total acidity: 6.5 g/l
- Alcohol: 13 % vol

The aroma of Riesling blends fresh notes of lemons, limes, and blooming herbaceous meadows, complemented by hints of honey and sponge cake in the finish.
